  • DAVE ONG

    Dave Ong is the co‑founder of 2 Brothers Brewery in Moorabbin, Melbourne, a pioneering force in Victoria’s craft beer scene. Originally trained as a physiotherapist, Dave spent years working in New York — including in the Bronx — before returning home with a new passion sparked by the American craft beer movement.

    In 2007, Dave and his brother Andrew salvaged brewing equipment from a shuttered Times Square brewery and shipped it to Melbourne, laying the foundation for 2 Brothers Brewery. While Andrew took charge of brewing and recipe development, Dave steered the business side — sales, operations, and finance — ensuring the brewery’s independence and growth.

    Under Dave’s leadership, 2 Brothers became the first craft brewery in Melbourne’s south‑east, earning multiple awards at the Australian International Beer Awards and brewing its 1000th batch by 2017. Beyond the beer, Dave helped shape the brewery’s welcoming spaces, from the New York‑inspired Beerhall to the dog‑friendly Beergarden, creating a community hub as much as a brewery.

    These days, Dave loves spending time with his beautiful wife and three children, but you might still catch him around the brewery — sharing stories, pouring pints, and keeping the spirit of 2 Brothers alive.

  • JESSICA BEAUMONT

    Jessica (AKA Jess) Beaumont’s journey in hospitality began back in 2007, working directly alongside Dave, where her passion for beer and the industry first took root.

    From there, she honed her craft at some of Melbourne’s most iconic venues — Circa, The Prince, and The Prince Deck — under the Melbourne Pub Group. Her curiosity then led her deeper into the world of wine, taking on the role of Restaurant Manager at Balgownie Estate.

    Her love for hospitality opened doors to the acclaimed Jackalope Estate, as food and beverage manager, overseeing DOOT DOOT DOOT AND RARE HARE.

    Fast forward to 2025, over a beer with Dave, Jessica was invited to bring her wealth of experience and her trademark warmth back to 2 Brothers Brewery as Venue Manager.

    Jess is passionate about our beer, supporting local wineries, and championing old-school hospitality. She has a knack for remembering your drink order, but more importantly, you’ll remember her name.

  • Stephen shaw

    Born to an Australian father and a Filipino mother, Stephen Shaw grew up with a palate shaped by two worlds — Vegemite breakfasts and festive lechon feasts (never at the same time). At 17, he moved from the Philippines to Melbourne and immediately began his culinary journey with an apprenticeship at The Sebel, honing his skills in large-scale events.

    From there, Stephen’s path led him to the Bridge Hotel in Mordialloc in his early 20’s, before discovering a deep passion for French cuisine at The French Brasserie in Melbourne.

    While working full-time at the Brasserie, Stephen spent weekends at 2 Brothers Brewery, making those famous pizzas you’ve heard about and deepening his love for beer and food pairings. From there, he broadened his horizons at Barmah Winery in Mornington, exploring the nuances of wine and how it complements food.

    After returning to the Bridge Hotel as Head Chef, Stephen was offered the opportunity to open his own business — Chef Shaw Kitchen — alongside long-time collaborator Dave Ong of 2 Brothers Brewery. Together, they unite food and beer under one roof, with Stephen thoughtfully designing every dish to pair with the brewery’s creations, whether it’s the malty depth of an English brown ale or the crisp refreshment of a pilsner.
